I have two days left to eat all the stuff in my fridge before I leave for my Sri Lanka holiday, so it’s time to upcycle what is left in there.
For today’s quick lunch, I used some mozzarella, a tomato and a piece of turkey breast as well as a bit of cream cheese and a wholegrain bun from yesterday and combined it to a nice little caprese toast.
Per person you need:
- a slice of bread or half bun (the flatter the better, it makes cutting and eating easier)
- a piece of turkey breast
- two to three slices of mozzarella
- 1/2 tomato
- a table spoon of cream cheese
- herbs and/or a tea spoon of tomato paste
- salt, pepper
- a bit of olive oil
- if you have: rocket
It’s pretty easy. Mix the cream cheese with the herbs you want and the tomato paste and spread it onto the bread. Meanwhile, let the turkey breast fry in the olive oil, just use salt and pepper on it. Cut the tomato and put it on the bread. Take the turkey when it’s finished and put it on the tomato before adding the mozzarella slices. Add a bit of fresh pepper. That’s it! The rocket would fit everywhere between the layers, unfortunately I ate all of it yesterday ;-)
If you have time, you can let it rest in the oven with a lot of heat, so that the mozzarella can melt a bit. But it works also without it. Enjoy!
